Chili-Soup-Stew Recipe Swap

Hey friends! If you know me well, you know that I love a good bowl of soup. I grew up eating Campbell's soup of one kind or another most days at lunch. My mom would mix Campbell's Vegetable Beef soup with a can of Campbell's Chili Beef soup (which they don't make anymore) and it was so delicious on a cold day. These days, you can find me in my own kitchen trying out all sorts of soup recipes.

I was so excited when Leslie posted on her blog that she would be hosting a recipe swap. I immediately commented and said that I would like to participate. Please check out everyone's recipes! Let's not waste anymore time! The most recent soup that I made that was a HUGE hit with our Tuesday night group of young adults is a White Chicken Chili . . . on crack. This recipe scores bonus points because you can make it in a crockpot!!

You will need a 6-8 quart crockpot (slow cooker). I used a liner and it made clean up so easy! I also used pre-cooked shredded chicken from Costco. The original recipe called for raw boneless and skinless chicken breasts. I think you can use either the pre-cooked or the raw chicken and the soup will turn out great.

freezer. I didn't use a whole
packet in my soup. 


Here are the ingredients needed:

2 large boneless skinless chicken breasts (or pre-cooked shredded chicken from Costco - I used about a pound and a half)

1 small onion, chopped

1 can corn, drained

1 can black beans, drained and rinsed

1 can rotel (or any brand of diced tomatoes and green chilies) - do not drain

2 cups chicken broth (I ended up using 2 1/2 to 3 cups broth)

1 cup chopped bacon - I used pre-cooked bacon pieces in a bag (Great Value Real Bacon Pieces)

1 packet dry ranch dressing mix (I used Hidden Valley)

1 1/2 tsp. cumin (I love cumin!)

1 heaping Tablespoon chili powder

1 package cream cheese (I used Philadelphia brand - 1/3 less fat)

1 cup (or more) shredded cheddar cheese

Instructions:

Put liner in crockpot!

Put chicken in bottom of crockpot.

Add onion, corn, black beans, rotel, chicken broth, cumin, chili powder, dry ranch dressing packet, and bacon. Stir together. Place block of cream cheese on top of everything.

Place lid on crockpot and cook on low for 8 hours.

If you used raw chicken, remove from crockpot and shred with two forks. If you used pre-cooked Costco chicken, you may need to shred some of the larger pieces. Place chicken back in crockpot.

Add cheese to crockpot and stir.

Serve with additional bacon and cheese to go on top. We served with grilled cheese sandwiches which sounds like a lot of cheese in one night . . .but the young adults loved the combo.

Note: I used light cream cheese. When I first took the lid off the crockpot, I didn't think the cream cheese had melted properly and I almost panicked. Once I stirred everything up and added the cheddar, it all melted together perfectly. I think the soup would be even creamier if you used the regular cream cheese.

You can serve with tostito chips. You can garnish with slices of avocado or snippets of cilantro.

  1. I always use those crock pot liners too - gosh they are amazing and make clean up such a breeze. Every time I go to Costco I grab that chicken too - they can be used for so many recipes. Your recipe sounds delicious!

  2. Ooh, this sounds amazing! Plus, I learned a new thing -"crockpot liner." I don't even own a crockpot so not sure this sounds so appealing to me, but...is it to make clean-up easier? Is it plastic, like plastic wrap? I'd be afraid of melting it (I'm also the person that's afraid to really clean the toaster cuz what if I get soap or moisture inside it and electrocute myself the next time I make toast #anyexcusenottoclean).

    1. The crockpot liner is some sort of plastic and it doesn't melt. I had heard about them years ago and didn't want to try them. I'm so glad I did - they are a game changer. If this will make you feel better . . .I just recently realized that a little tray slides out of the bottom of my toaster and it can be washed!

  3. I'm SO going to make this, Lisa. (Minus the beans -- Tom might divorce me, LOL) A bit concerned about the Hidden Valley Ranch packet; last time I made the Mississippi Pot Roast, the sodium level was over the top. Do you think omitting it is OK; or, can you suggest a substitute?

  4. Oh, my goodness, this sounds so divine. Like a bit of heaven in a bowl. Love that you are such a soup eater...me, too!! I have a taco soup that calls for Ranch mix and it makes the soup. Mevely317 mentions omitting it from your recipe but I agree with you, it would just not be the same.
    Glad everyone loved this soup. Happy to see it is made with chicken. Seems like most of my soups call for hamburger. Nice to have a change.

  5. P.S. Glad to be reminded of crockpot liners. I need to buy them in bulk and always forget to get them. I use my crockpot mucho mucho and they make clean up a breeze.

  6. I love those liners- makes the cleanup process some much faster and easier! I didn't realize Costco sold chicken like that- definitely going to look for it next time I'm there.

  7. You're the second blogger I've seen refer to the liners for slow-cookers. I've never heard of them before and suspect we don't have them in Australia. The chicken chilli recipe though sounds yum. Thanks for sharing.

    1. It is always interesting to me the differences in products to purchase in one country but not another. I wonder if you could get the liners at a decent price on amazon? As I'm typing that . . .I assume amazon ships to Australia.

  9. Your recipe sounds so good! I am a Costco shopper, but have never purchased or even known about the chicken being sold that way before. I will definitely look for it next time I'm there! Thanks for the info!

    1. A friend told me to look for the chicken. At first, I thought it was too pricey but when I finally bought it . . I was hooked! There is a lot of breast meat in the bag.

    1. I looked on Amazon and they have them. I also googled "does Amazon ship to Australia" and from what I read, they do?? Our regular grocery stores have the liners as do some of the big box stores. Do y'all have big grocery stores or neighborhood markets? We saw several Aldi's in Ireland and I wonder if they have their own brand of liners.
